This recipe tastes so amazing and reminds me of being on a tropical beach with exquisite clear blue waters.

I love mojitos and the moment I tried this drink it was instantly a new all time favorite of mine. I tasted this drink for the first time at the Lancelot Restaurant in Vail, Colorado. They call it a winter mojito. The Lancelot Restaurant is delicious and I highly recommend it if you’re ever in Vail.

The coconut mojito is made with fresh cooling mint, coconut rum, coconut cream and club soda. A delicious and tropical cocktail for any occasion. I hope you enjoy it just as much as I do!

Anyone can make a coconut mojito. The key is coconut rum and coconut cream shaken together with fresh leaves.

Ingredients:

•         8 leaves fresh mint

•         1 wheel lime cut in half

•         2 teaspoons lime simple syrup or plain

•         3 oz coconut rum or regular white

•         1 oz cream of coconut see tips for substitutions

•         3 oz club soda

•         Extra lime juice to taste

Optional garnishes:

•         1 wheel lime

•         1 sprig mint

•         1 tsp flaked coconut

Things You'll Need

•  Jigger

•  Muddler

•  Highball glasses

Instructions

Step 1) Place mint and lime in a tall glass and carefully muddle together to release the mint oils and fresh juice. Don't grind them up too much or  otherwise you'll be spitting out tiny pieces of mint!

Step 2) Fill glass 1/2 full with ice over the muddled ingredients.

Step 3) Fill cocktail shaker with ice. Pour in simple syrup, coconut rum, and cream of coconut.

Step 4) Shake for 20 seconds then strain into glass.

Step 5) Top off drink with club soda and stir carefully. Adjust to taste with a squeeze of fresh lime juice if you like.

Step 6) Garnish with a lime wheel and a sprig of mint. You can also add a dollop of coconut flakes on top! I personally don’t like coconut flakes, so I don’t use any.
