Carrot Raisin Salad - Chick-Fil-A Copy Cat Recipe
Ever since I was a little girl, I fell in love with the sweet taste of carrot raisin salad.
It doesn’t taste like carrots what so ever. It’s actually sweet and so delicious. It tastes like pineapple juice. My mom used to pick me up after dance class at Gentri Gandy’s Dance Factory and we would get Chick-Fil-A for dinner regularly. This is when Chick-Fil-A still served carrot raisin salad. I make this recipe regularly at home and it’s one of my absolute favorites!
The secret to this recipe is shredding the carrot’s extra fine with food chopper.
Ingredients you’ll need:
4 & 1/2 cup Julienne cut carrots “chopped fine”
1 can crushed pineapple 8 oz
1 cup raisins
1/2 cup mayonnaise
1/2 cup sugar & 2 tablespoons
1 & 1/4 Tablespoon fresh lemon juice
You will also need a food chopper, a larger tupperware bowl with a lid and spatula.
Step 1) Shred all of your julienne cut carrots with your food chopper until they are fine. Place into a large tupperware bowl.
Step 2) Add the crushed pineapple, raisins, mayonnaise, sugar and lemon juice. Fold together for several minutes with a spatula until you no long see the mayonnaise and the mixture in combined well.
Step 3) Cover and chill in the fridge overnight before serving.
Step 4) Enjoy! Makes 8 small servings.
