Mouthwatering Mexican Street Corn and Skinny Frozen Strawberry Margaritas

Hello Gorgeous!!! I’m so excited to share this with you! This recipe is an all time favorite of mine. Buttery corn with a creamy sauce, a splash of lime, Cotija cheese and cilantro. It’s everything you love about Mexican Street Corn, but it’s so much easier to enjoy and serve. Skillet Mexican Street Corn is a flavorful, quick and easy side dish to add to any dinner party.

Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes 


INGREDIENTS:

  • 2 tablespoons butter

  • 4 cups frozen corn

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • juice of 1 lime

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1/2 cup cotija cheese

  • 1/4 cup fresh cilantro

  • 1 bundle of fresh green onions

INSTRUCTIONS:

1. Melt butter in a skillet over medium- high heat. Stir in frozen corn. Cook just until corn is heated through, stirring often.

2. Add the mayonnaise, sour cream, lime juice, cumin and chili powder.

3. Add half of the Cotija cheese, stirring until melted.
Garnish the top by: sprinkling in the remaining Cotija cheese.

4. Rinse off your green onions. Then using kitchen shears cut the green onions into thin slices over the skillet. (Using only the green onion, not the white bulb)

5. Finely chop the cilantro carefully and sprinkle it over the top.

6. Then add a dash of chili powder to the top & enjoy!

Skinny Frozen Strawberry Margaritas 

This version includes frozen unsweetened strawberries, tequila, triple sec, and lime juice. Simple delish ingredients that you can throw together so quick. 

When you order a frozen strawberry margarita in a restaurant it can have loads of extra sugar and sometimes pre-packaged margarita mix.

Calories???
This skinny strawberry margarita has approximately 167 calories and only 14 grams of sugar. The majority of the sugar is completely natural coming directly from the strawberries with a small amount from the triple sec. This recipe tastes great and you can indulge guilt free. 

A frozen strawberry margarita of the same size from any typical restaurant has about 215 calories and 34 grams of sugar!!!!! That’s a freaking lot of extra sugar. 

In case anyone was wondering Tequila labeled 100% agave is naturally gluten-free. So if you want your tequila to be gluten-free pick up some that’s 100% agave. If your not gluten-free, any brand of Tequila will work fine. 

Ingredients:

  • 1 cup frozen sliced strawberries (you can use whole, slices just blend a little easier)

  • 1 oz (2 Tbs) 100% agave blanco tequila

  • 1/2 oz (1 Tbs) triple sec

  • 1/2 oz (1 Tbs) lime juice

  • a little water for thinning, if necessary


Instructions: 

  1. Put everything into the blender, except for the water. Blend until smooth. A blender cup works perfectly for this if you're only making one serving. If it seems too thick to drink, blend in some water, 1/2 Tbs at a time until it's at the consistency you like.

  2. It is that easy. You can now pour and serve. Stay safe always and drink responsibly!!
