Chia Coconut Pudding

I fell in love with the flavor of this pudding and I can’t wait to share with you this absolutely delicious recipe. It’s so easy to make. I like to top it off with granola and blueberries!

Ingredients you’ll need:

•   2 cups coconut milk

•   2 tablespoons maple syrup

•   1 teaspoon vanilla extract

•   1/4 cup chia seeds

Optional toppings after pudding has chilled:

•   Granola

•   Blueberries

•   Strawberries

•   Bananas

•   Sprinkle of cinnamon

Step 1) In a large bowl mix together the coconut milk, maple syrup, and vanilla extract. Slowly whisk in the chia seeds. If you pour them in quickly, they’ll clump.

Step 2) Stir every few minutes for first ten minutes. If pudding doesn’t start to thicken after you’ve added the chia seeds, add a tablespoon more and continue stirring until it begins to thicken.

Step 3) Once the mixture is nice and thick refrigerate the pudding. It needs to be refrigerated for at least 3 hours to thicken before serving.

Step 4) When ready to serve, divide the chia coconut pudding into 3 bowls or jars. Add your desired toppings and enjoy!! Serves: 3
