Cake Batter Red Velvet Pancakes with Cream Cheese Icing Drizzle

I’m so excited to share this recipe with you for Red Velvet Pancakes. It’s a perfect breakfast treat for a Valentine’s Day morning or honestly any morning you’re having a sweet craving. I’m totally in love with Red Velvet Cake!!! If you love Red Velvet cake also, you’re going to love these red velvet pancakes.

I like to think of myself as a pancake master. When I’m making regular pancakes I always add in extra ingredients, I like to call it the “icing on the cake.” When making regular pancakes I always use milk never water, I add cinnamon, vanilla extract, two eggs and a very small amount of coconut oil. **I heat the coconut oil in the microwave first, then pour it into the batter and whisk it together. The extra ingredients I add literally makes such a simple pancake recipe so exquisite and extra delicious. I’m honestly quite the cook. I love cooking for other people when I have the time and my pancakes always turn out so thick and fluffy. OMG!! So good!! I honestly just LOVE pancakes. Combing my love for pancakes and red velvet cake together has been a total game changer. They are so amazing!!! I hope you all love this recipe.

Let’s Get To The Recipe:

Ingredients you’ll need to make the Red Velvet Pancakes:

  • Red Velvet cake mix

  • 1/2 cup All-Purpose Flour

  • 1 1/4 Cup Milk

  • 2 Eggs

  • 1/2 Tablespoon Vanilla Extract

  • Coconut Spray to grease the pan so the pancakes won’t stick

OPTIONAL: You can add Baking Protein Powder to the recipe to make it a bit healthier. Quest Protein Powder Multi-Purpose Mix is a great one for baking.

Ingredients you’ll need to make the Cream Cheese Icing (optional):

  • 4 ounces Cream Cheese at room temperature

  • 1/2 cup Powered Sugar

  • 2 tablespoons Milk

  • 1 teaspoon Vanilla Extract

Prep Time: 5 minutes
Cook Time: 15 minutes

Serves: 4-5

INSIDERS TIP: If you don’t have a red velvet cake mix, you can use any flavor of cake mix you have at home and the recipe will still turn out great!

Directions for the Red Velvet Pancakes:

Step 1) Do not heat your skillet on high. You will burn your pancakes. Heat your skillet on medium heat while you prepare the batter.

Step 2) In a medium bowl whisk together the two eggs and milk until well combined.

Step 3) Add the red velvet cake mix and all-purpose flour at the same time. Use electric beaters for 2-3 minutes until the batter is fluffy. If you don’t have electric beaters, beat by hand for 2-3 minutes or until your batter is fluffy.

Step 4) Spray the pan with coconut oil and pour 1/4 cup of batter onto the skillet. Cook until you start to see small bubbles forming on the pancake, flip your pancake and cook for no more than 1 minute. Cook each pancake about 1 minute or less on each side.

Step 5) Make sure to leave the heat on medium/low so the pancakes don’t burn. Keep a close eye on them while cooking. Adjust your heat lower if needed. Cook pancakes one by one until all are finished.

Directions for the Cream Cheese Icing:

Step 1) Using electric beaters, beat together cream cheese, powdered sugar, milk, and vanilla for 1-2 minutes. Drizzle over pancakes as desired and enjoy.
